Vellarikai Inji Thayir Pachadi | Cucumber and Ginger Raita

Vellarikai Inji Pachadi is a quick and tasty Cucumber and Ginger raita made with yogurt and a spicy coconut base. Perfect as a meal or accompaniment to Rice or Parathas.

Ingredients
  

  • 1 Cucumber medium, I used British Cucumbers
  • 1 cup Homemade Yoghurt whisked fine
  • 3 TBSP Grated coconut fresh / frozen
  • 1 inch Ginger grated
  • 1 tsp Cumin Jeera
  • 2 Green chillies adjust to taste
  • 1/2 tsp Salt or to taste
  • 1/2 tsp oil
  • 1/4 tsp mustard seeds
  • 1 sprig curry leaves
  • 1/8 tsp Asafoetida skip for GF

Instructions
 

  • Peel and dice the cucumbers finely.
  • Grind coconut, cumin, ginger, chillies to a fine paste using very little water.
  • Whisk the curd well, free of lumps. Add the ground paste, mix well. Chill well.
  • Just before serving ,add salt and if required tempering with mustard and curry leaves
