Vegan Pad Thai is a quick to make Asian-style Dinner in under 30 mins. Totally customisable with protein of choice, it is a delicious meal that your family will surely love.
1/4cupveggies of choiceone can use French beans, carrots, broccoli, bok choy
2tspPeanutsroasted, and slightly crushed
1tspSpring Onion Greens
1lemoncut into wedges, to serve
1tspRoasted Sesame seeds
Sauce
2TBSPSoya Saucelow sodium
1tspRice Vinegar
2TBSPMaple syrup
1/2tspSriracha / Hot sauce
1tspLemon juice
Instructions
Cook Noodles according to packet instructions. Drain
Mix all the ingredients for the sauce mentioned above and keep aside.
In a pan /wok, heat sesame oil. Saute onions, garlic, ginger on high heat.
Now add the blanched veggies of your choice.
Now add the sauce and drained noodles
Finish with Spring Onion Greens and a dash of lemon
Top with crushed roasted peanuts , sesame seeds and serve immediately.
