Ingredients
  

  • 2 Avocado ripe and scooped
  • 1 red onion small
  • 1 tomato ripe, deseeded
  • 1 tsp salt
  • 2 tsp basil I used fresh
  • 1 tsp Lemon juice
  • 1/2 tsp garlic I used pods
  • 3 tsp olive oil
  • 1 tsp black pepper crushed
  • 3 slices bread to serve, plain or toasted

Instructions
 

  • Peel and mash ripe avocado with the back of a fork in a flat bowl
  • Add half of the olive oil, finely diced basil, salt, minced garlic and mix gently
  • Add half of the minced onion and deseeded tomato.
  • Mix well and refrigerate till use
  • If using toasted bread, brown evenly on both sides till crisp (buttering them is totally optional()
  • Else, use bread slices as is.
  • Mix the chilled avocado spread with the rest of the oil, lemon juice, black pepper, salt and spread evenly on the bread slices
  • Top with the remainder of the minced tomato, onion and basil.
  • Serve immediately.
