Chaat and the Indian Palate
Chaat is welcome in any form at my place. I had a batch of cooked and frozen chickpeas, and when my elder girl asked me to make something chatpata (spicy) on a rather lazy Sunday afternoon, I suggested that I make this. She was more than eager to help me assemble the chaat.
Although slightly tedious, this is very similar to the Ragda patties or the Dry Tikki Chaat. The base instead of dried peas gravy is similar to the Chole (chickpeas gravy) served with Puri or Bhature. Topped with sev , chutneys and a dash of yoghurt, this makes for a lip smacking and colourful chaat for any party or get together. How to make this Quick TIkki Chole Chaat
I made this real quick as I always have a batch of cooked chickpeas (not canned) at home in my freezer. Click on the following video to learn how to prep a batch of cooked chickpeas that can be used in a jiffy.

Ingredients to make Tikki Chole Chaat:
(A) For the Tikki (patties)
- 700 grams Potatoes (boiled , peeled and grated)
- 1 Beetroot (peeled, steamed and mashed,opt)
- 1/4 cup Peas (steamed)
- 2 Onions (large, minced)
- 1/4 cup Bread Crumbs (use store bought or homemade)
- 1 tsp salt
- 3 Green chillies(chopped fine, adjust spice)
- 2 tsp Cashews (broken into bits)
- 4 TBSP Oil (to shallow fry)
- 1 tsp red chilli powder
- 1 tsp Coriander leaves (chopped)
Chole :
- 2 cups Cooked Chickpeas ( i used Brown chickpeas here)
- 4 tsp Oil
- 4 Tomato (ripe, Pureeed)
- 1 Onion (large, minced)
- 1 tsp salt
- 1 TBSP Ginger Garlic Paste
- 2 Green Chillies (Minced)
Dry Masalas:
- 1 TBSP Garam Masala Powder
- 2 TBSP Chole Masala
- 1 TBSP Red Chilli powder
- 1 tsp Dry Mango Powder (Amchur)
- 2 TBSP Coriander powder (Dhania powder)
- 1/4 tsp Clove powder
Garnish:
- 3 tsp Coriander leaves (chopped fine)
- 1 tsp Chat Masala
- 1/4 cup Sev / Ompudi
- 2 TBSP Lemon juice
- 1/4 cup Onions (minced)
- 1/4 cup Tomato (minced fine)
- 1/4 cup Green Chutney
- 1/4 cup Tamarind dates Chutney
- 1/4 cup Pomegranate pearls
- 1 cup yoghurt (whisked well, opt.)
Method to make Tikki Chole Chaat:
Chole: Follow this method to make Chole. If you have cooked / canned chickpeas, drain and make the usual recipe with Chole. Let the gravy be little dry and not too runny.
To make the tikki: mix all the ingredients under Tikki list and make into tikkis. If not cooking immediately, refrigerate for upto 12 hours. Else blast freeze for 10 mins to make them firm. Shallow fry in oil and drain on paper tissues.

To assemble the Tikki Chole chaat:
Take 2 Tikkis per serving, mash them up slightly. Add a ladle full of prepared chole. Top with chopped onions, tomatoes, a dash of yoghurt and all the chutneys and toppings. Add sev and serve immediately. Watch the video above to know how to assemble

Ingredients
TIkki

- 1 Onions large, minced
- 1 tsp salt
- 1 TBSP Ginger Garlic Paste
- 2 Green Chillies Minced
Dry Masalas:
- 1 TBSP Garam Masala powder
- 2 TBSP Chole Masala
- 1 TBSP Red Chilli Powder
- 1 tsp Dry Mango Powder Amchur
- 2 TBSP Coriander Powder Dhania powder
- 1/4 tsp Clove Powder
Garnish:
- 3 tsp Green coriander leaves chopped fine
- 1 tsp Chaat Masala
- 1/4 cup Sev / Ompudi
- 2 TBSP Lemon Juice
- 1/4 cup Onions minced
- 1/4 cup Tomato minced fine
- 1/4 cup Coriander Mint Chutney Hari Chutney /
- 1/4 cup Tamarind dates Chutney
- 1/4 cup Pomegranate pearls
- 1 cup Yoghurt whisked well, opt.
Instructions
How to make the Chole

Wow, so many different flavours, textures and colours. Love tikki chole so much. I like how you’ve made beetroot and potato tikkis. Also really appreciate your suggestion of freezing cooked chana. Before the summer ends, have to make this.
