Saunf ka Sherbet is a sugar free (no sugar, no jaggery, no honey) Summer cooler made with Fennel seeds and basic kitchen staples. Makes for a refreshing Summer Mocktail.
Homemade Coolers are always welcome during the blazing summers we have here and we keep experimenting with various combos of beverages and sugar-free coolers to keep the heat at bay. If the recent mercury levels are anything to go by, we are braced for a hugely scorching summer and fennel seeds / saunf is an excellent natural coolant for the body.
This sugar-free fennel sherbet (or saunf ka sherbet) is a quick beverage that you can make in bulk. It takes a bit of prep work (totally hands free- yay ????) and you have a wonderful, soothing, no refined sugar added beverage to sip on.. how cool is that, huh :). Tips and tricks to make this Sherbet
- If you don’t have fresh grapes on hand, sub with watermelon / kiwi / musk melon or any juicy fruit for a variation
- If you wish, you can add palm candy / jaggery / honey to sweeten this sherbet. We loved it sweetened with natural fruits like raisins and grapes.
- You can re-use the soaked saunf in any dish or make a light lemonade adding syrup with it.
- If you don’t mind the sugar, make a Sherbet pre-mix with 100 grams Khadi Shakkar (rock candy / mishri) and 200 grams saunf and 2 cardamoms- powder it well and store in an air tight container. Then add 1 -2 tsp of this premix and proceed with the sherbet / lemonade as needed. We went the sugar free way – 100% ! Check out the recipe below

What you need for Sugar-free Saunf ka Sherbet
- 1/4 cup fennel seeds (pref lucknowi saunf)
- 2 cups water
- 1 tsp raisins
- 1 tsp mint leaves
- 1/2 tsp chaat masala
- 1/2 tsp roasted cumin powder (bhuna jeera)
- 1/2 tsp kala namak
- 10 grapes (green , fresh)
- 5 grapes (purple, fresh)
- 1 tsp lemon juice
- 1 cup ice cubes

How to make sugar-free saunf ka sherbet
- Soak the lucknowi saunf in 2 cups of water for 4 hours in room temperature or overnight in a refrigerator
- Similar soak the raisins for 15 mins in 3 Tbsp warm water
- Muddle together both the fresh grapes, raisins, mint leaves, chaat masala , jeera powder
- Strain the soaked saunf / fennel seeds to a large mixing bowl.
- Add the muddled mix from step above
- Mix well. Add the kala namak and mix well
- In a tall Glass, add the muddled mixture, lemon juice pour in the fennel water, top with shredded mint, ice
- Mix well and serve immediately for a sugar-free saunf sherbet
- You can make this ahead for a party / picnic / warm afternoons and serve chilled

This cooler made it’s way to Summer Coolers theme for Sshh Secret Challenge suggested by Sasmita. My partner Jayashree made this delish Grapes Shot with pepper and black salt as Secret ingredients. Using Saunf (fennel seeds) and raisins, I made this Sugarfree Saunf ka Sherbet.
Sugar free Saunf ka Sherbet | Sugafree Fennel Iced Cooler
Equipment
- Bowl
- Cocktail Muddler optional , sub with any sturdy wooden stick
Ingredients
- 1/4 cup Fennel Seeds pref lucknowi saunf
- 2 cups water

I love saunf ka sharbat or variyali nu sharbat, as it is called in Gujarati. Super refreshing, delicious and just perfect for hot summer days. Love your version that’s free of refined sugar.
yes it’s a take on the variyali sherbet as we know it locally here. But we personally loved the sugar free version.
