Soup is our go-meal on most days. A warm bowl of soup with a side of salad / toasted bread is something that is comforting like a warm hug. While we have a fleeting winter where I live, the winter veggies like broccoli, white & yellow corn, many native greens like saag, kale etc are abundantly found in local markets. For winters, one of our family favourite soup is this Moroccan Harira – a Middle Eastern inspired broth made with chickpeas and warming spices.

Today, we have a family favourite veggie Broccoli in an aromatic Broccoli Nutmeg Soup. Nutmeg is a spice that is unparalleled, and like many of its team members, needs to be used very judiciously. We have a personal favourite Cream of broccoli soup version which we tasted at the Turkish Patisserie – Cafe Hurrems here (which perhaps had a dash of nutmeg), and we attempted to re-create the soup based on personal preferences. Broccoli Almond Soup is another favourite, although it is quits different from this soup
While the former was redolent with cream, yet subtle on the spices, we have made it vegan.

What you need to make Instant Pot Vegan Broccoli Soup
- 1 cup Broccoli florets (washed, trimmed and drained)
- 1/2 cup Onion (minced)
- 2 tsp garlic (chopped)
- 1/4 cup Spinach (chopped)
- 1 tsp almonds
- 1 bay leaf
- 1/8 tsp Nutmeg
- 1 tsp salt
- 1/2 tsp White pepper powder (opt.)
- 1 cup Almond milk (store bought or homemade)
- 1 TBSP Olive Oil
