Grilled Corn Mango Salsa – Why ?
Because, nothing screams Summer than Mango and Corn, right? And as I sit down to write this, parts of India have already moved to the Annual Monsoon season. Monsoon is a huge necessity for an agri-dependant economy like India. And surprise, surprise ! Chomping on grilled ???? Corn-on-the-cob liberally spiced with lemon and smoked paprika is a huge emotion and a favourite street food as well
As the world moves towards varied hues of the Pandemic lockdown (and revival),we are still unable to step out freely in India (and my own city in particular). So why not bring the same emotion home. I am using hulled corn today, and this salsa is almost a No-Cook recipe and quick to make if you have the two major ingredients – Corn and Mango on hand. What kind of Mangoes can be used for Grilled Corn Mango Salsa?
Any sweet variety can be used. But for salsa, I prefer the semi-sweet (almost ripe, yet slightly tart) variety available here called Totapuri. Not using the raw variety, but the semi ripe variety

Some FAQs to make the Best Grilled Corn Mango Salsa
Corn on the cob or Hulled Corn ?
If you have a Tandoor (Indian Coal based stove) or a Hibachi, you can certainly roast the corn on that whole (and then hull it). However, I have used previously hulled Raw Corn and used a grill corn to get those (yum!) grilled marks on the corn.
What can be served with this salsa?
Well, we love to dig into this as is. But it also tastes good with some nachos or as a side with some grilled meats or veggies. Perhaps this salsa served on canapés also would make for a delectable treat.
Can I make this raw?
Well, this is a grilled corn mango salsa. But you can use boiled or fresh corn (without grilling it) with varied results.
Can I use butter to make this salsa?
This salsa is grilled using olive oil. But you can add any salted butter or even nut butter (if you want it to remain plant based)
Major ingredients used in Grilled Corn Mango Salsa
- Mango – Any Semi Sweet variety would work. We don’t want this cloyingly sweet.
- Corn – Fresh / hulled / Frozen Corn works
- Salt and Spices – a combo of black pepper, chilli flakes etc
- Olive Oil – Butter may be used (negligible oil)
- Tomatoes, Onions, Bell Peppers – for freshness
- Lemon Juice
- Fresh Mint shredded
Let’s get to the recipe
Prep time – 15 mins, Cook time – 10 mins, Serves – 2
- 1 cup Corn (dehusked)
- 1/2 cup Mango (diced)
- 1/4 cup Onion (minced)
- 1/4 cup Tomato (minced)
- 1/2 tsp Olive Oil
- 1/2 tsp salt
- 1/4 tsp Chilli Flakes
- 1/2 tsp Black Pepper – optional
- 1 tbsp Mint (minced fine)
- 1 tsp Green chilly (minced fine) – Optional
- 1/2 tsp Lemon Juice
How to make Grilled Corn Mango Salsa
- Microwave or steam the corn kernels till soft. Drain and reserve.
- In a grill pan, add the olive oil. Brush evenly to coat the entire grill pan.
- Add half of the onions and saute.
- Add the steamed corn and saute for 4-5 mins on medium heat.
- Transfer this to a bowl.
- Now add the rest of the ingredients except salt.
- Chill for 15 mins
- Add salt just before serving and serve immediately.
