Air fryer Corn & Swiss Chard Kebab

This is a take on the famous Makai Palak Kebab that is famous in India, particularly the monsoons when Fresh / Sweet Corn is available in abundance. Most kebabs are served with this yummilicious Dahi Wali Hari Chutney (a dip made with fresh herbs’ paste mixed with hung curd) while I served mine with this Chaat wala Hari Chutney.

Kebab vs Cutlet / Tikki

Although they (might be) used interchangeably, kebab and tikki are as different as chalk and cheese. Kebab is more meat based (with veg/vegan substitutes like paneer, soya, TVP, Rajma, Chickpeas) while tikki is almost similar to a cutlet with a starch base like potato and sometimes bread crumbs are used for binding.

Many kebabs also fried onion paste for flavouring along with whole spice powders like clove powder, cardamomm powder, especially the ones from Lucknow or Avadhi Cuisine.

Tandoor is used to ‘bake’ the kebabs while basting them midway (sometimes even with ghee) to give out that smoky, characteristic flavour to kebabs. Another Kebab you can try on the stove top / Tandoor is this Kand ke kebab (Purple Yam kebab) – a seasonal speciality available in the winters in Northern and western parts of India.

Swiss Chard and Corn Kebab

Having narrowed down my options to a very unique lauki kebab from the famous Moti Mahal cookbook – “On the Kebab Trail”, the tender lauki was amiss each time it was bought. It got made into several other things, except the kebab. Using Swiss Chard was a challenge that I wanted to take up, and being the monsoon soon there was tender corn too.

FAQs about this kebab:

  • Air fryer makes this almost Zero oil, although the tava / OTG option could yield similar results.
  • No Bread crumbs or maida is used making this Gluten Free.
  • If one wishes, you can add paneer but we loved it vegan.
  • If you don’t have swiss chard, you can simply replace it with Baby spinach and follow the same process. Kale might also work, but I haven’t tried it.

Let’s make this Swiss Chard – Corn Kebab in an airfryer

Prep time – 20 mins, Bake time – 18 mins (per batch) , Makes – about 12 kebabs

  • 200 grams Rainbow Swiss Chard (about a medium sized bunch)
  • 300 grams Potato
  • 200 grams Sweet Corn
  • 1 TBSP salt
  • 3 tsp Oil (divided use)
  • 3 green chilles
  • 2 tsp Coriander
  • 1 TBSP Ginger (grated)
  • 2 TBSP Cashewnuts
  • 3 TBSP Rice Flour

Spice Powders:

  • 2 TBSP Coriander powder
  • 1 tsp Dry Mango powder (Amchur)
  • 1 TBSP Garam masala
  • 1/2 tsp Clove Powder
