A quick to make snack is Bangalore Bakery Style Toast. It brings back so many memories of wolfing down these delicacies while growing up. Iyengar bakeries in Bangalore were (and are) sources of (yes, over processed but) quick treats that could keep you full till dinner time. Not to forget they were (again, are) pocket friendly too. I remember even during college days, when pocket money was either nil or frugal, birthday treats were often at these bakeries, with a shared veg puff or a cake, and that gave us so much happiness.

History of Bakery Toast
I have a feeling (grown up now), that this dish was a very clever way ot using up un-sold bread for the bakery and it was a win-win for customers too, with all the spicy toppings on top.. Writing about all these again and revisiting this post has got me so nostalgic that I want to just pack my bags and take a trip down memory lane and enjoy all the Bakery treats, guilt free!
Grandmom used to mention that bakeries thrive on people like us, who bought regularly from them. But in the carefree days of growing up, all this advice was thrown to the wind. I make these toast (as its known locally in Bangalore) regularly for a evening snack, and its quite filling. Mostly finished in the oven, but if you dont have one or don’t want to use it. Don’t miss on grilling them a bit (or in the tava) for a crusty yet soft snack.

Bangalore Bakery Style Toast
Type : Snack, Cuisine : Fusion ; Spice level :Medium
Ingredients for Bakery Style Toast:
- 8 Bread slices
- 2 TBSP Oil – to pan fry / grill
- 1 Onion ( large, minced fine)
- 1/4 cup carrots (Grated)
- 1/2 cup Tomatoes (Chopped and deseeded)
- 1/2 tsp Turmeric powder
- 1 tsp Salt (adjust as bread also has salt in it)
- 3 Green chillies (minced fine, adjust spice)
- 1 TBSP Coriander leaves(minced fine)
- 2 TBSP Garam masala powder
- 1 tsp Red chilli powder (adjust spice)
- 1 tsp Sugar
- 2 TBSP Butter (normal or vegan)
- 1 TBSP Cumin seeds
How to make Bakery Style Toast:
- In a pan, heat 2 TBSP oil, splutter cumin, add onions and turmeric and sauté well till onions turn translucent.
- Now add green chillies, grated carrots and sauté for 4 mins till tomatoes turn mushy and raw smell of carrots go away.
- Now add salt, spice powders, garam masala, coriander leaves and rest of the ingredients. Mix well.
- Cool the mixture thoroughly
- Heat an oven to 150 deg C. Or a thick cast iron tava / skillet.
- In a baking pan, line with parchment or baking sheet.
- Slightly butter both sides of the bread slices.
- On one side of the slice, spread 1 TBSP of the mixture. Repeat for all slices.
- Bake in the oven (or a heated tava without any parchment paper ) for 4-5 mins.
- Grill for further 1-2 mins till sides are slightly crusty.
- Remove from oven, cool for few seconds.
- Cut into diagonals and serve immediately
- This tastes best when eaten hot.

Super aagidhe open bakery toast . To be honest ,this style of open toast from iyengar bakeries has now become a rarity. The old time taste isn’t there anymore .
