Bean Salad with Spinach and Mint Vinaigrette is a super delish Spring – Summer Salad that is perfect for brunch potluck or a quick filing snack.
Salads are a go-to dish for the dear husband. He can practically whip up salads from anything that you give him. Ditto with mocktails. Ergo, he is also quite picky about these two when ordering out or when I make salads at home. While me and the kids are more of a soup person, he likes his salads to be filling, non-greasy, fuss-free yet nutritious.
Come Summers, we are ready to dig into delish salads like this Roasted Pineapple Salsa, the classic Caprese, Watermelon Feta and the like…
So, most of the time, I try and end up overthinking a salad, and therefore end up not making one at all. Like today’s which got done after a lot of overthinking and uncontrolled procrastination 🙂

But the scorching summers (yes, already super hot in my part of the world), makes us look at salads as a perfect brunch especially on weekend. Like this salad, I had all the ingredients (and a salad in my mind with so many different variations(, yet got around to making them only today. What you need to make Bean Salad with Spinach and Mint Vinaigrette
Prep time – 10 mins ; Cook time – Nil, Serves – 3 generously
- 1/2 cup Baby Spinach (shredded / julienned)
- 1/4 cup Carrot (chopped fine)
- 1/4 cup Red cabbage (shredded)
- 1/3 cup Tomatoes (deseeded and cubed)
- 1/3 cup Red Onion (sliced / cubed fine)
- 1 cup Red bean (Rajma, cooked but not mushy)
- 1/4 cup Red Radish (sliced thin, halved)
Dressing:
- 2 TBSP Olive Oil
- 1/4 tsp White vinegar (didn’t use)
- 1/2 tsp salt
- 1 TBSP lemon juice
- 2 tsp Mint (shredded fine)
- 1/2 tsp White pepper powder
- 1/2 tsp Red chilli flakes
- 1 tsp Ginger grated (optional, didn’t add)
How to make Bean Salad with Spinach and Mint Vinaigrette
- Wash and prep all veggies according to the ingredient list above separately in a flat plate
- Chill well for 10-15 mins
- Whisk all the ingredients for the dressing / Vinaigrette and keep aside.
- Just before serving, mix all the salad ingredients in a bowl
- Add the dressing and toss well
- SErve immediately with a sprig or mint and chopped cherry tomatoes

Ingredients
- 1/2 cup Baby Spinach shredded / julienned
- 1/4 cup Carrot chopped fine

That’s one refreshing salad with beans and spinach kalyani. Love that zingy dressing with mint and ginger. I m still skeptical about adding fresh spinach to salads , your hearty salad plate is tempting me to try .

I replaced spinach with lettuce. I am like Priya , have not gotten use to eating raw spinach. And no used red wine vinegar i stead of white vinegar. Followed rest of the recipe to T and loved it. A refreshing salad as the weather warms up.
