Let’s make an eggless banana bread with no refined sugar or refined flour. Perfect for a snack, breakfast or a sweet nibble.
There’s banana bread, and there’s BANANA bread !! For many people around the world, it’s breakfast.
For us at home it’s a sweet nibble, a dessert kind of kick that is mildly sweet, forgiving and uses up the banana on the counter top. I have made many versions of Banana bread already, but we are ALWAYS game for a newer version. Quick breads are much loved at home, and we always like a healthier treat, avoiding the excess sugar / fat as much as possible and going for natural substitutes.
Quick breads resembling cake is often the most baked sweet treat at home. Be it Chai Spiced Banana Bread , Zucchini Double Chocolate Bread (on so yumm!!) or any other avatar of the Banana Bread with Cranberries or no Knead Wholewheat Banana Bread, it is always a sellout success at home, catering to the snack bites post school or at school.
Or a dessert post dessert or for midnight cravings!
Did you know homemade Applesauce or bananas or homemade pureed Pumpkin could replace eggs and fat too ? Did you know Zucchini could be hidden inside a chocolate cake ?

Tips for a great Banana Bread:
- Oven Baking times may vary. See what works for you, till a skewer / toothpick comes out clean
- If you are omitting any / adding any ingredient from the above list, the baking time and output may vary.
- Once the wet and dry ingredients are mixed, gently fold. Overmixing may result in the bread turning hard
- Ensure all ingredients are at room temperature.
- If using Maida / All purpose flour in place of wholewheat flour, the liquid needed might be slightly lesser.
- If the bread is browning too fast, tent the baking pan with aluminium foil quickly
- I used a 8 1/2 X 4 1/2 pan. If you use any other pan, the bake time would vary slightly. Keep an eye on the rising bread.
