Grilled Corn and Spinach Sandwich
This is an oft-repeated sandwich that we make at home. Especially during the lockdown, it was (IS) difficult to keep kids satiated. This sandwich comes very handy as its made with everyday ingredients with a smooth and silky wheatflhour-based white sauce- pretty much all the ingredients that go into a healthy sandwich.
As with other sandwiches, this one too came about for the kids primarily, but surprise surprise, the non-bread eater of the house – the spouse- also loved it a lot. I make the filling in slightly larger quantities, and the same can be used to make white pasta, with just a few added ingredients.

Can I make this Grilled Corn and Spinach Sandwich vegan?
I have used whole milk for the white sauce, but if you are vegan , you can use almond / plant based milk. I have also made this sandwich without any cheese as the white sauce itself was super creamy. But if you are a fan of cheese, do add it (and adjust salt accordingly).

Prep time – 15 mins, cook time – 20 mins, Makes – 4 servings
Ingredients to make Spinach-Corn Sandwich:
- 8 slices Brown Bread
- 1 TBSP Butter (to toast the bread)
- 2 TBSP Olive oil (split use)
Filling:
- 1 cup Spinach (washed, drained, dried and julienned)
- 1/3 cup Sweet Corn (Steamed)
- 1 Onions (minced)
- 2 Garlic pods (minced)
- 1/2 tsp Salt
- 1/2 tsp Black pepper
White sauce:
- 3 TBSP Wholewheat flour (you can use APF as well)
- 1/16 tsp Nutmeg
- 1/2 tsp Red chilli flakes
- 1 cup Milk (use plant based milk if you are vegan)
Optional add ons:
- 1/2 cup Grated cheese
- 1/4 tsp green chilli (Minced)
How to make Grilled Corn and Spinach Sandwich
- Prep the ingredients, blanch spinach, grate cheese if using
- Make the wheat flour roux / white sauce as per recipe instructions

Ingredients
- 8 slices Brown Bread
- 1 TBSP Butter to toast the bread
- 2 TBSP Olive oil split use
Filling:
- 1 cup Spinach washed, drained, dried and julienned
- 1/3 cup Sweet Corn Steamed
- 1 Onions minced
- 2 Garlic pods minced
- 1/2 tsp Salt
- 1/2 tsp Black pepper
White sauce:
- 3 TBSP Wholewheat flour you can use APF as well

Notes
- Brown Bread or White bread can be used. I have used brown bread
- This sandwich can be GF if you use GF bread. Also can be vegan if the milk and cheese can be subbed with vegan equivalents
Wow ! That’s one combo I love , spinach & corn – well I make it almost the same way except that I grate in some cheese . Protein hai na yaar – and yes the video is super , very clear and well made !

good one. I make the sauce and it disappears into the pasta and so haven't been able to try it in sandwiches. The next time I make I shall keep aside some for the sandwiches 🙂

Kalyani this sandwich brings back some good memories. The first time I ever tasted grilled corn and spinach cheese sandwich was in India when the CCDs opened up first in India. I fell in love with the whole taste. Now I can follow your recipe to make it at home. Surprisingly not many cafes here make this delicious sandwich.
