Carrots, fresh sweet peas, fresh french beans – signs of spring around the world and the best veggies to serve for an Easter brunch, wouldn’t you say ?
These garlic and mint laced carrots are ridiculously easy, tasty and make for a vegan side for any lunch. Easter somehow reminds me of bunnies and that somehow inexplicably linked to carrots ???? and we were happy to discover a new way to eat our favourite family veggie 🙂
Can I make these Air fryer carrots in an oven / stove top too?
These can be made on the stove top too but since we love a slight caramelisation to our carrots (& hands free too, yay ????), the air fryer method won hands down. Of course , you could also make it in an oven. Details in the recipe below
What are the variations to these Air fryer Carrots
The variations to these air-fryer carrots are endless – the classic honey-sesame glaze, Mayo, sticky sauce, kimchi sauce, XO sauce etc etc. but we wanted to keep it simple to have it as a side (the second time I made these as a meal for myself). Do let me know how you (would) make these delicious carrots !
Of course if one prefers one could use butter or skip the garlic. But this is something we loved as a vegan + gluten free side dish without any fancy trimmings!

What you need to make Air Fryer carrots
- 200 grams English carrots
- 2 Tbsp olive oil
- Fresh mint leaves – for garnish
Marination :
- 1 tsp dried mint powder
- 1/2 tsp salt
- 1/2 tsp chilli flakes
- 1 tsp cumin powder (sub with cumin seeds)
- 1/2 tsp lemon juice (sub with dry mango powder OR sumac)
- 1 tsp garlic powder (you can also add whole garlic cloves additionally if you like, which we did)
- 1 tsp onion powder
- 1 tsp paprika

How to make these Air Fryer carrots
- With a sharp Knife, scrape the carrots. I used good quality carrots so didn’t peel them . You can peel them if needed.
- With a crinkle knife or a sharp knife, cut them diagonally into 1/2 inch batons as shown
- In a bowl, add the carrots, half the oil and all the ingredients for the marinade.
- Mix well with clean hands or a slotted spoon till the marination is coated well
- Keep aside, covered for 15 mins.
- In a pre-heated oven / air fryer , line a baking sheet, add the marinated carrots and toss once.
- If using whole garlic cloves, add them in the marination itself.
- Bake at 180 C for 15-18 mins, stirring in between and glazing it with the rest of the olive oil midway.
- Bake till the carrots are slightly soft and caramelised around the edges, bake time depends on quantity and thickness of the batons.
- Serve as side topped with fresh mint or indulge as a meal.

The crinkle cut and mint flavour for these carrots are brilliant. Though I don’t have an airfryer, the recipe cameout brilliant in the oven.
