Roasted pineapple salsa is a delicious salsa made with roasted pineapples, seasonal veggies and a basic dressing. Perfect as an appetiser / side for parties or potluck.
Pineapple is a tropical fruit that lends itself to both sweet and savoury flavours and a huge favourite at our place. From the delish Cuban pineapple strawberry salad to broccoli pineapple pizza to pineapple raita to upside down pineapple cake to pineapple Coconut Cooler to pineapple Gojju ( umm.. you get the drift right:p) , this is a fruit we wait for most during the brief winter that descends upon us.
We love eating all fruits in a pure, unprocessed form as much as possible and this roasted pineapple ???? does just that ! The roasting takes the sweetish pineapple to another level when the smoky flavours lends itself to a beautiful mildly- charred deliciousness that can’t be described in words.
Having said that, all it takes is 5 mins of prep time and max 10 mins to make a serving of this delicious salsa. Trust me, this will be your most favourite thing ever for any potluck / Super Bowl / Netflix marathons. You can easily make this ahead and easily double / triple when serving a crowd. If you are feeling fancy, go on, add some avocados or toasted corn to make it more filling . With leftover salsa (if that ever happens!), team it with a burrito like Priya has.

What you need to make Roasted Pineapple salsa
- 2 pineapple slices
- 1/2 onion (minced)
- 1/2 cup bell peppers (opt.)
- 1/4 cup cucumbers (cubed fine)
- 1/2 cup tomatoes (deseeded and diced)
- 2 Tbsp mint (finely chopped)
Dressing
- 1/4 tsp chaat masala
- 1/4 tsp salt
- 2 tsp lemon juice
- 1/4 tsp chopped green chillies

Tips to make the freshest Roasted Pineapple salsa
- Use the sweetest pineapple you can find.
- Grill on medium flame slowly till char marks appear and the pineapples turn aromatic.
- Rest for 2-3 mins before mincing
- Mix all ingredients and chill ahead of serving. Add dressing just before serving and serve immediately.
- You can add minced jalapenos in place of green chillies if preferred.
How to make Pineapple Salsa
- Heat a grill pan, roast the pineapple slices on both sides on medium heat till slightly charred and a smoky aroma wafts. Takes about 5-7 mins on low flame.
- Pro Tip : Once you place the pineapples on the pan, lightly salt it on both sides so the juices begin to release and they caramelise faster
- You can also use an air fryer / oven to grill the pineapples before mincing them (see tips/notes for details)
- Rest these slices for 2 mins and then chop it into bite sized chunks
- In a large bowl, add the roasted pineapple chunks, red onions, diced tomatoes , Cucumbers and peppers.
- Whisk together the dressing in a small bowl.
- Add the dressing to the salsa and mix well.
- Finish with shredded mint and serve immediately as is or with some nachos

I love pineapple salsa ..it is so refreshing and tongue tickling. I will try roasting the pineapple next time I make. Generally I use the pineapple as is but now this roasting technique is tempting me to make some
