Parfait is a layered dessert, often zero cook and is deliciously light, fruity and summery. In some versions cream is also added. This is the mango season, so I have combined yogurt with seasonal mango and other everyday ingredients to make a light dessert that is best served chilled.

Tips and Tricks to make this easy No Cook Sugarfree Yogurt Mango Parfait
- Feel free to sub the ypghurt with store bought / flavoured / vanilla or coconut flavoured yogurt
- addition of sugar is optional. Else one may use stevia or honey too.
- Use fresh and sweet mangoes, if you feel the need to add sugar if the mangoes aren’t sweet enough, pl whisk the yoghurt with 1 tsp or two of powdered sugar
- Keep all ingredients chilled for best results.

How to make Sugar free Mango Yogurt Parfait
- 1 Ripe Mango (I used Alphonso) – cubed
- 1/2 cup melons (I used Muskmelon)
- 1/2 cup Greek yogurt (check recipe below on how to make greek yogurt at home)
- 2 tsp walnuts (lightly roasted) – skip for nut allergy
- 1/4 tsp Saffron strands
- 1 tsp almonds (slivered)
- 1 tsp Glazed Cherries (opt.)

Method to make the Sugar free Mango Yogurt Parfait:
- To make the green yogurt, strain the homemade yogurt in a sieve / muslin cloth / fine tea strainer over a bowl
- Place this contraption in the fridge for 2-3 hours. Use the whey water (strained water to knead roti dough)
- Use the strained, thick yoghurt in the recipe below.
- If you dont want to use greek yogurt, make sure the homemade yogurt is thick and stiff. Click this link on a quick video how to make thick homemade yogurt
- Chill the serving glasses while you assemble the ingredients.
- Peel the mango and puree 2/3 of the mango without adding water or milk to a thick puree consistency.
- Add the melons to this puree and blend once more
- Reserve the rest of the mango into small chunks
- In the bottom of the serving glass, spoon in 1-2 tsp of yogurt
- Add a layer or two of the mango puree
- Add 1 tsp of the mango chunks
- Top with crushed walnuts and a pinch of saffron.
- Repeat the above 4 steps again or till you reach 80% of the glass.
- Top with yogurt again, saffron, slivered almonds and the glazed cherries
- Chill for 30 mins and serve.
