No Cook Nuts Barfi is a Gluten Free fudge made with nuts. Serve as a quick nibble or make for Diwali or festivals.
Nuts are a great source of proteins and provide macronutrients as well. I had bookmarked Harini’s recipe and modified it a bit to suite our palate.
Quick nibble for unexpected guests or an after school snack
Whether it is made for festivals or unexpected guests or as a sweet nibble or an after school snack, this is great for active kids and adults alike . Roasted Gram / Putaani / Potukadalai / Hurigadale is also high in B12 and excellent for regulating menstrual cycles. As for diabetics or those on a restricted diet, a bit of moderation is necessary for this or any sweet as it is quite high on calories and could detract any diet if you are on to lose extra weight / bulk up.
So, do make it this Diwali or Dusherra and treat your family n friends with a healthy quick to make Sweet Nibble.
How can I customise this barfi for my palate?
- Use a mix or only one type of nuts. The sugar might vary slightly depending on the nuts used and the quantity.
- Top with chopped nuts or some choco chips to make it more festive
- Ditch the milk for more ghee to bring together the fudge. It will also increase the shelf life a bit
- Use Brown sugar / palm sugar in place of the white sugar used here.

What you you need to make No Cook Mixed Nuts Barfi :
- 1/4 cup Almonds
- 1/4 cup Cashews
- 1/4 cup Walnuts
- 1/4 cup Roasted Gram (Pottukadalai /Hurigadale)
- 3/4 cup Milk Powder (I used Nestle brand)
- 3/4 cup Powdered Sugar (measure after powdering the sugar)
- 3 TBSP Milk (or as needed) – I used 2 tsp
- 1/2 tsp Vanilla extract (optional but recommended)
- 1 tsp Ghee (just for greasing)
Tips to make delicious Mixed Nuts Barfi
- Make sure the nuts are fresh ; Stale nuts are rancid and spoil the taste of the dish.
- Roast the nuts in an air fryer / oven / microwave / stove top till warm and crispy.
- Cool thoroughly before grinding them, pulse the nuts in batches till you get a slightly wet, nut butter consistency.
- As we are adding milk, make sure to refrigerate the barfis.
- Refrigerate the mix before cutting the slices, this gives sharp cuts. Grease the knife slightly if needed to make the sharp cuts.

How to No Cook Mixed Nuts Barfi :
- Dry Roast all nuts on low flame for 10-15 seconds or until warm. Cool, powder. I went a little ahead and got a slightly wet mixture (which is 3 steps short of nut butter)
- While still warm, add the powdered sugar, milk powder , cardamom powder, vanilla and milk (if using) and sightly knead to a soft dough.
- Pat on a greased plate / parchment paper.
- Refrigerate for 15 – 20 mins and then cut into barfis.
- If you don’t add milk, this will keep for 4-5 days on the counter itself (weather permitting). But I prefer to refrigerate it.
- Store in an airtight container in the fridge and consume within few days.
